Instant Pot Artichokes with 3 Paleo Dipping Sauces
I'm telling you, friends. All my artichoke cooking anxiety has been steamed away now that I've discovered the amazing results I can get with my Instant Pot! It's so easy, in fact, that Ocean Mist Farms fresh artichokes have become a staple in my house.
It is literally as simple as cutting off the top of each choke, snipping off the tips of each outer leaf, placing them in the Instant Pot cut side down on the trivet with 1 cup of water and cooking on manual mode for 10 minutes. I'm loving them so much right now that I came up with three easy, Paleo dipping sauces to enjoy them with.
The first is a Creamy Dairy Free ‘Cheese’ Sauce with cashew and coconut milk as the base ingredients.
Then this Roasted Red Pepper Aioli has an incredibly bold flavor that might be my favorite.
And because artichokes pair so well with lemons, this Lemon Ghee Dip is a no-brainer!
They're all so delicious, I could never serve just one!
