Instant Pot Artichokes with White Wine, Capers and Burrata


Spring is a favorite season for many reasons, but at the top of that list are the amazing fruits and vegetables that this season brings with it.  In particular, I love the bounty of artichokes we can find this time of year at our local grocery store.


Artichokes are so versatile and fun, and I'm always looking for new ways to enjoy their amazing flavor.  And I'm super excited how easy and fast they are to cook in my the Instant Pot! 


My latest Instant Pot success was a gorgeous appetizer of artichokes with a savory white wine, garlic, capers and creamy burrata.  Served with a slice of sourdough toast, you simply can't beat this mouthwatering dish. And the best part? All this amazing flavor cooks in just 20 minutes with only one pot to clean up!
