Kid-friendly Veggie Meals

When it comes to getting healthy meals on kids' plates, creativity is always the name of the game.  When my kids were small, I mastered the art of turning some of their favorite protein and carb-rich meals into works of veggie-packed art.  So for all you moms out there still looking for that same balance, I want to encourage you with a few tried and true recipes from Ocean Mist Farms that will please both the adults and kiddos around your dinner table.

There's a couple things I love about this recipe. First is the non-traditional approach to the cheese sauce using a mix of alfredo and shredded cheddar.  The flavor is definitely a stand out to boxed mac 'n cheeses.  But just as important to me is the fact that this recipe comes together in 5 minutes using pre-cooked pasta and our Season & Steam Brussels Sprouts Halves.  Pretty fantastic, right? 

Serve them up in fun individual dishes like the mini cast iron skillets shown above and score some extra mom points tonight! And while not necessary, don't hesitate to cut the Brussels halves into smaller pieces prior to cooking if you have some smaller kiddos at home.

Creamy Artichoke Pesto Pasta is another hit with adults and kids alike.  The fresh pesto provides a wonderful, savory flavor while the cheesy, creamy base gives your family what they love.  It is a fantastic alternative to spaghetti night and the fact that you get to contain the mess to one pot is a bonus!

Artichoke Beef Burritos

If your family is like mine, taco nights or burrito nights were just as beloved as spaghetti night. And to be honest, it was always one of my favorite nights too.  But to prevent burn out, I liked to change up my protein pretty regularly.  Even a simple switch between corn and flour tortillas always helped to reduce the feeling of too much repetition. 

With this Artichoke Beef Burrito recipe, you will feel anything but burnout!  The tender, baby artichokes are cooked right into the ground beef mixture, so they pick up the delectable flavor of the meat and spices for a truly unique and memorable burrito night!
