Our Favorite Veggie-Forward Meals

It's not that I don't like, or don't eat meat, but my preference is veggies.  I've even been known to make a meal out of  vegetable side dishes when eating out.  Thankfully I have a veggie loving family who understands exactly where I'm coming from.

There are so many different flavors and textures found in vegetables, that a well-round veggie plate can be an incredibly satisfying meal even for the biggest meat-lover.  If you're looking for inspiration for your next veggie-forward meal, I've got a few recommendations you have to try!

Artichokes have been the center of my meal more times than I can remember.
