The Start of Summer and Stuffed Artichokes

The summer season has officially started, and we are in full outdoor dinner-party mode! With the longer days and warmer summer nights, our friends are eager to come by and enjoy a slow meal on the deck. One of my favorite dishes to impress dinner guests is Stuffed Artichokes with Spicy Italian Sausage and Sweet Red Pepper.

Stuffed Artichokes with Spicy Italian Sausage & Sweet Red Pepper

Summer entertaining tends to be very laid back and not on a particular schedule, so I love dinners that don't require rounding everyone up at a certain time. The slow cooker method is one of my favorites this time of year. Not only does it help keep the kitchen cooler, but it's also makes dinnertime more flexible so parents can relax and the kids can hang out while the artichokes stay nice and warm. 

Another perk is that I can enjoy quality time with my guests and let the slow cooker take care of the rest! After preparing the filling and stuffing the artichokes, I sit back and let the slow cooker do the work for me. I don't know about you, but I don't find it much fun to stand over a stove in the heat of summer while trying to make conversation!

Stuffed Artichokes with Spicy Italian Sausage & Sweet Red Pepper

If you've never tried stuffing artichokes, you need this recipe on your dinner menu this week! The sweet and spicy filling flavors the artichoke leaves, and the cheese melts down into the pockets of the artichokes to hold it all in. It makes for an impressive presentation for your guests, too.
