Artichoke Parmesan Toast

12 Ocean Mist Baby Artichokes, cooked

1 cup mayonnaise
4 oz. parmigiano-reggiano cheese
16 slices cocktail rye toast


  1. Mix mayonnaise and cheese; place mixture in a pastry bag. Cut artichokes in quarter pieces and set aside.
  2. Place rye slices on a baking sheet. Top each bread slice with an Artichoke quarter and squeeze mayonnaise-cheese mixture onto Artichoke. Bake for 8-10 minutes or until golden brown.
