Stuffed Half Artichokes
3 artichokes, trimmed and cut in half, fuzzy choke cleanly removed
1/2 cup Italian bread crumbs
3 artichoke stems, peeled and chopped
6 black olives, chopped
1 clove garlic, peeled and chopped
1 vegetable bouillon and water halfway up in artichoke-filled pan
Optional: Parmesan cheese
- Clean artichokes and trim cut in half. Place artichokes in pan with cut side down and vegetable bouillon. Let simmer while you make stuffing.
- For stuffing, mix breadcrumbs with artichoke stems, chopped olives, garlic, and olive oil (enough to hold mixture together). Cook until tender, 45 minutes. Check pan as water will evaporate so you may have to add more.
