Broccoli Pesto Chicken Pasta

Recipe Information


Pesto Ingredients:
4 oz. fresh basil
4-5 cloves garlic
3 Tbsp. Pine Nuts
2 Tbsp. olive oil
4-5 sundried Tomatoes

Chicken Pasta Ingredients:
1 split chicken breast, cubed
2 Tbsp. olive oil
1 Tbsp. garlic, chopped
3 Tbsp. pesto
1 can (15 oz.) dice tomatoes
10 oz. bowtie pasta
1 cup Broccoli
1 cup Snap Peas
1 cup Zucchini
1 cup white wine
Parmesan cheese
Salt and pepper, to taste


Direction for Pesto:

  1. In a food processor combine fresh Basil, Garlic cloves, Pine Nuts, olive oil, and sun-dried Tomatoes.

Directions for Chicken Pasta:

  1. In a sauté pan add olive oil, pesto and the chopped garlic, bring to a simmer. Then add diced chicken and sauté until fully cooked. Afterwards add white wine, cook out the alcohol. Then add the vegetables, Broccoli, Snap Peas and Zucchini (any fresh vegetable can be substituted) on top the simmering chicken and sauce to steam.
  2. In large pot start boiling water for pasta, add the can of diced tomatoes, salt, and pepper and return to a simmer. Once pot is boiling add bow tie pasta cook for about 10-12 min.
  3. Once everything is cooked, toss all in large bowl, add Parmesan cheese and enjoy!
