Lime-Coconut Artichoke Ice Pops
Keep the kids and kitchen cool this summer with these simply deliciou and easy to make Artichoke Ice Pops. The secret is using OMF's Season& Steam Artichokes to whip up these cool pops in a jiffy!
1 Season & Steam® cooked artichoke (stem, heart and crown- no choke), prepare according to package directions
3 cups vanilla almond milk
1 cup pure lime juice
1 can (14 oz.) sweetened condensed milk
½ tsp.coconut extract
2 drops of green food coloring (optional)
- In a blender, combine the cooked artichoke with 2 tablespoons of sweetened condensed milk. Blend on high until smooth.
- Add the remaining sweetened condensed milk, almond milk, lime juice and coconut extract; gently pulse until mixture is well combined. Add food coloring to your desired shade of green. Pulse until the color is well distributed.
- Pour the liquid into ice pop molds and insert a wooden stick into each. Freeze for 8 hours or until solid. These pops will keep in the freezer up to 2 weeks (if they last that long)!
