Lime-Coconut Artichoke Ice Pops

Ingredients

  • 1 Season & Steam® cooked artichoke (stem, heart and crown- no choke), prepare according to package directions
  • 3 cups vanilla almond milk
  • 1 cup pure lime juice
  • 1 can (14 oz.) sweetened condensed milk
  • ½ tsp.coconut extract
  • green food coloring (optional) to get desired green color

Directions

  1. In a blender, combine the cooked artichoke with ½ the can of sweetened condensed milk. Blend on high until smooth.
  2. Add the remaining sweetened condensed milk, almond milk, lime juice and coconut extract; gently pulse until mixture is well combined. Add food coloring to get desired shade of green. Pulse until the color is well distributed.
  3. Pour the liquid into ice pop molds and insert a wooden stick into each. Freeze for 8 hours or until solid. These pops will keep in the freezer up to 2 weeks (if they last that long)!
