Roasted Cauliflower and Arugula Salad
Spring is in full bloom, and this warmer weather has me craving light, fresh salads with simple ingredients that can be put together in no time. This is not your average salad, and it proves that eating healthy doesn't mean sacrificing flavor!
What makes this the perfect salad comes from all the different flavor profiles coming together in one perfect bite. The arugula has a peppery finish to cut through the tangy lemon and olive oil dressing. Roasting the cauliflower and prosciutto brings out a smoky sweetness, and the shaved Parmesan adds a sharp, salty bite.
