Cauliflower

A popular “carb replacement” for its unique texture and flavor, cauliflower can be enjoyed by itself or in a savory dish. Roasted, riced, grilled and sautéed are just a few of the ways to prepare this versatile and nutritious fresh vegetable.

  • One serving contains daily value of vitamin C
  • Low in calories and sodium
  • Contains no fat, saturated fat or cholesterol
  • Look for cauliflower that has a solid white or creamy white color, with no black spots.  It should also have a tightly packed head without loose or spreading florets.
  • Because cauliflower is typically film-wrapped, you can examine the quality by looking for a firm base with bright green, hydrated leaves.
  • Variations in head size does not affect quality or flavor.
  • Store cauliflower in its wrapping in the crisper section of your refrigerator for up to five to seven days.
  • Sautee and add to stir fry dishes, roast with other fresh vegetables, serve raw with dip or prepare cauliflower pizza crust.
  • Cauliflower is fully cooked when it has a tender texture that can be easily pierced with a fork.
