Air Fried Brussels Sprouts Tacos with Peanut Sauce

Ingredients

For the Tacos:

  • 1 16-ounce bag Ocean Mist Farms Fresh-Cut Brussels Sprouts Halves
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon low sodium soy sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon Kosher salt
  • Nonstick cooking spray
  • Corn tortillas
  • Peanut sauce
  • Avocado, cilantro and jalapeno to garnish

For the Peanut Sauce:

  • 1/2 cup creamy peanut butter
  • 1/3 cup low sodium soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or brown sugar
  • Small knob of fresh ginger, finely grated
  • 1 clove garlic, minced
  • 1/4 cup of water

Directions

  1. Make the peanut sauce. Combine all ingredients to a bowl, stirring with a whisk until smooth. Set aside.
  2. Toss Brussels sprouts halves in a bowl with sesame oil, honey, soy sauce, chili powder and salt. Mix well to combine.
  3. Preheat air fryer to 400F. Spray basket with nonstick spray and add Brussels sprouts to the air fryer. Air fry until Brussels are crisp and golden brown on the edges for about 13-15 minutes, shaking the basket halfway through.
  4. Serve Brussels sprouts in a warmed corn tortilla and drizzle with peanut sauce. Top with avocado, cilantro and jalapenos, if desired.
