1 cup fresh strawberries, sliced lengthwise into quarters
1 medium Granny Smith apple, quarter-inch diced
2 navel oranges, peeled and sliced
½ cup candied pecan (can be found at any grocer)
For the vinaigrette:
1 small shallot, minced (about 2 Tbsp.)
1 tsp. dried tarragon
½ tsp. kosher salt
¼ tsp. black pepper
2 Tbsp honey
¼ cup white wine vinegar
2 tsp. dijon mustard
¼ cup extra virgin olive oil
In a small bowl, combine all the vinaigrette ingredients and whisk or place all the vinaigrette ingredients into a jar with lid and shake. Set aside.
In a large bowl, gently toss the spinach, strawberries, apples and oranges (while keeping some of the fruit aside for garnish) with the vinaigrette. Garnish with remainder strawberries, apple and oranges. *Add additional fresh cracked paper if desired.
