The "Anytime" Spinach Salad

Ingredients

For the salad:

  • 1 bag (6 oz.)  Ocean Mist Farms baby spinach
  • 1 cup fresh strawberries, sliced lengthwise into quarters
  • 1 medium Granny Smith apple, quarter-inch diced
  • 2 navel oranges, peeled and sliced
  • ½ cup candied pecan (can be found at any grocer)

For the vinaigrette:

  • 1 small shallot, minced (about 2 Tbsp.)
  • 1 tsp. dried tarragon
  • ½ tsp. kosher salt
  • ¼ tsp. black pepper
  • 2 Tbsp honey
  • ¼ cup white wine vinegar
  • 2 tsp. dijon mustard
  • ¼ cup extra virgin olive oil

Directions

  1. In a small bowl, combine all the vinaigrette ingredients and whisk or place all the vinaigrette ingredients into a jar with lid and shake. Set aside.
  2. In a large bowl, gently toss the spinach, strawberries, apples and oranges (while keeping some of the fruit aside for garnish) with the vinaigrette. Garnish with remainder strawberries, apple and oranges. *Add additional fresh cracked paper if desired.
