Artichoke & Avocado Shrimp Ceviche

Ingredients

  • 2 large Ocean Mist Farms artichokes, rinsed and trimmed. Remove all of the petals and set aside for serving. Remove the choke in the center and dice the heart.
  • 1 avocado, diced
  • 2 Tbsp. Ocean Mist Farms cilantro chopped
  • 1 tsp. jalapeño, chopped
  • 2 Tbsp. Ocean Mist Farms green onions chopped
  • 1 lime, juiced and zested
  • 8 oz. Bay shrimp, cooked
  • cup of Clamato™
  • 5 dashes Tabasco™

Directions

  1. Simply combine all of the ingredients above and allow to sit for one hour in the fridge for all of the flavors to come together.
  2. We serve this on an artichoke petal and add very thin tortilla strips for an added crunch.
