Ingredients
Loaf
- 1 cup of artichoke hearts, cooked
- ½ cup flour of your choice
- 1 tsp. salt
- 1 cup of onion, chopped
- ½ cup of ketchup
- ½ tsp. basil
- 1 cup oatmeal
- 3 eggs
- ¼ tsp. pepper
- 2 tbsp. chopped parsley
- 1 tsp. oregano
- 4 oz. mushrooms, cooked and drained
Sauce
- 1 small onion, finely chopped
- 1 tbsp. oil
- ½ red or yellow bell pepper, finely chopped
- 1 (8 oz.) can of tomato sauce
Directions
- Mash the artichoke hearts. Add oatmeal, flour, and eggs. Mix well.
- Blend mixture with the remaining ingredients.
- Place mixture in a greased 9x5x3 loaf pan.
- Mix all sauce ingredients together and layer on top of the loaf.
- Bake at 350°F for 50 minutes. Check halfway through cooking time to make sure the sauce is not burning. If it does start burning, cover loosely with foil and continue time.
