Ingredients

Loaf

  • 1 cup of artichoke hearts, cooked
  • ½ cup flour of your choice
  • 1 tsp. salt
  • 1 cup of onion, chopped
  • ½ cup of ketchup
  • ½ tsp. basil
  • 1 cup oatmeal
  • 3 eggs
  • ¼ tsp. pepper
  • 2 tbsp. chopped parsley
  • 1 tsp. oregano
  • 4 oz. mushrooms, cooked and drained

Sauce

  • 1 small onion, finely chopped
  • 1 tbsp. oil
  • ½ red or yellow bell pepper, finely chopped
  • 1 (8 oz.) can of tomato sauce

Directions

  1. Mash the artichoke hearts. Add oatmeal, flour, and eggs. Mix well.
  2. Blend mixture with the remaining ingredients.
  3. Place mixture in a greased 9x5x3 loaf pan.
  4. Mix all sauce ingredients together and layer on top of the loaf.
  5. Bake at 350°F for 50 minutes. Check halfway through cooking time to make sure the sauce is not burning. If it does start burning, cover loosely with foil and continue time.
