Artichoke Irish Soda Bread

Ingredients

  • 1 large Ocean Mist Farms artichoke, finely chop & cooked (artichoke stem, heart and crown set aside for bread; save cooked petals for healthy snacking)
  • 4 cups all-purpose flour
  • 6 Tbsp. sugar
  • 1 tsp. baking soda
  • 2 tsp. salt
  • 1/4 cup cold butter, cut into small pieces
  • 1-3/4 cup buttermilk
  • 1 large egg
  • 3 Tbsp. fresh orange zest
  • 1 cup golden raisins, tossed with a a little all purpose flour

Directions

  1. Preheat oven to 375 degrees.
  2. Spray a sheet pan with non stick cooking spray.
  3. In a bowl of electric mixer, with paddle attachment, combine flour, sugar, baking soda and salt.
  4. Add the butter to the flour and mix into the flour just until butter is combined into the flour.
  5. In a medium size bowl beat egg with fork and add buttermilk.
  6. At low speed add buttermilk mixture to flour and mix until well combined.
  7. Add orange zest, raisins and artichokes to flour mixture and continue to mix until well combined.
  8. Place dough on a floured board and knead dough for a minute.
  9. Form dough into a round loaf. Place the loaf on the prepared baking sheet and using a sharp knife make an “X” on top of the loaf.
  10. Bake loaf for one hour or until golden brown and the bread cracks on the top of the loaf are very dry.
  11. Cool on a baking rack.
  12. Serve with butter or marmalade.
  13. Store left over bread in the refrigerator and warm up left over bread slices in the toaster..
