Ingredients

  • 2 whole Ocean Mist Artichokes, cooked

  • 1 ½ cups low-fat refried beans, warmed

  • ½ cup cherry tomatoes, sliced

  • ½ cup black olives, sliced

  • ½ cup salsa

  • ½ cup Ocean Mist Farms fresh cilantro, chopped

  • ½ cup low fat sour cream

Directions

  1. Place cooked, cooled artichoke leaves in a single layer on a large platter.  Save cooked artichoke hearts for another meal.

  2. Spoon ½ teaspoon of warm beans onto each leaf.  Top beans with tomatoes, olives, cilantro and salsa.  Add optional toppings as desired.
