Ingredients

2 whole Ocean Mist Artichokes, cooked

1 ½ cups low-fat refried beans, warmed

½ cup cherry tomatoes, sliced

½ cup black olives, sliced

½ cup salsa

½ cup Ocean Mist Farms fresh cilantro, chopped

½ cup low fat sour cream
Directions

Place cooked, cooled artichoke leaves in a single layer on a large platter.

Chop up artichoke hearts as filler for artichoke leaves.

Spoon ½ teaspoon of warm beans onto each leaf. Top beans with tomatoes, olives, chopped up hearts, cilantro and salsa. Add optional toppings as desired.
