Ingredients
- 4 cooked Ocean Mist Farms artichoke hearts, stems and bottoms
- 1 Ocean Mist Farms leek, diced
- Salt, to taste
- 2 tbsp. butter
- 1 cup roasted red peppers (from a jar), drained
- ¾ cup parmesan cheese
- 3 tbsp. mayonnaise
Directions
- In a small sauté pan over medium-low heat, add butter and leeks. Sprinkle with salt. Cook until leeks are very tender, about 7-9 minutes. Set aside to let cool. Add Artichokes, Peppers, cheese, mayonnaise and cooled leeks to food processor or blender. Pulse until dip is smooth and well combined.
- Serve with Ocean Mist Farms baked artichoke leaves. Refrigerate any left over.
