Warm Brussels Sprouts Caesar Salad

This quick and easy brussels sprout Caesar salad comes together in just 15 minutes, and makes a perfect side dish coated in flavorful and creamy Caesar dressing. Great for a quick weeknight meal or a holiday dinner!

Ingredients

Caesar Dressing

  • 1/4 cup paleo mayonnaise
  • 1 garlic clove minced
  • Juice and zest from 1 lemon
  • 1 tsp dijon mustard
  • 1 tsp anchovy paste
  • 1/8 tsp sea salt
  • 1/8 tsp ground black pepper

Directions

1. Open the package of Brussels sprouts, and drizzle with olive oil, salt, and pepper. Seal, shake to disperse the seasoning, then microwave for 4-5 minutes according to package instructions.
 
2. Transfer the Brussels sprouts to a baking pan in a single layer and broil for 5 minutes until browned and crispy.
 
3. Transfer to a bowl, then in another bowl, whisk together all the ingredients for the Caesar dressing.

4. Pour the dressing over the Brussels sprouts and toss to coat.
