Ingredients
- 1 bag of Ocean Mist Farms Roastables – Spicy Buffalo Cauliflower Florets Roasting Kit
- 2 cans (15 oz each) Chickpeas, drained and rinsed
- 2 Tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Smoked paprika
- ½ teaspoon Kosher salt
- ¼ teaspoon Black pepper
- 1 cup Carrot sticks
- 1 cup Celery sticks
- 1 cup Cucumber, sliced
- 1 cup Jicama sticks
- 1 cup Radishes, sliced
- 1 cup Ranch or Blue Cheese dressing
Directions
- Preheat oven to 450ºF.
Roastables:
- Follow the bag preparation instructions for the Cauliflower and place on a baking sheet. Roast for 20 minutes until golden and tender.
Chickpeas:
- Pat the drained and rinsed chickpeas dry with paper towels to remove excess moisture.
- In a bowl, toss the chickpeas with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Spread the chickpeas onto the sheet tray with the Roastables, cook until they are crispy and golden, shaking the pan halfway through.
For Assembly:
- Arrange the Roastables Spicy Buffalo Cauliflower, roasted chickpeas, and vegetables on a platter alongside your dip of choice.
