Ingredients

  • 1 bag of Ocean Mist Farms Roastables – Spicy Buffalo Cauliflower Florets Roasting Kit
  • 2 cans (15 oz each) Chickpeas, drained and rinsed
  • 2 Tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • ½ teaspoon Kosher salt
  • ¼ teaspoon Black pepper
  • 1 cup Carrot sticks
  • 1 cup Celery sticks
  • 1 cup Cucumber, sliced
  • 1 cup Jicama sticks
  • 1 cup Radishes, sliced
  • 1 cup Ranch or Blue Cheese dressing

Directions

  • Preheat oven to 450ºF.

Roastables:

  1. Follow the bag preparation instructions for the Cauliflower and place on a baking sheet. Roast for 20 minutes until golden and tender.

Chickpeas:

  1. Pat the drained and rinsed chickpeas dry with paper towels to remove excess moisture.
  2. In a bowl, toss the chickpeas with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Spread the chickpeas onto the sheet tray with the Roastables, cook until they are crispy and golden, shaking the pan halfway through.

For Assembly:

  1. Arrange the Roastables Spicy Buffalo Cauliflower, roasted chickpeas, and vegetables on a platter alongside your dip of choice.
