Buffalo Wrap – Roastables Cauliflower Spicy Buffalo

Ingredients

Wrap:

  • 4 large Flour tortillas
  • 1 cup Iceberg lettuce, shredded
  • 1 cup Cheddar cheese, shredded or Blue Cheese crumbles
  • ½ cup Cucumbers, sliced
  • ½ cup Cherry tomatoes, sliced
  • ½ cup Carrots, shredded
  • ½ cup Ranch or Blue Cheese dressing

Directions

  • Preheat oven to 450ºF.

Roastables:

  1. Follow the bag preparation instructions for the Cauliflower and place on a baking sheet. Roast for 20 minutes until golden and tender.

Wrap:

  1. Warm the flour tortillas in a dry skillet or microwave for 10-15 seconds to make them pliable.
  2. Lay each tortilla flat and layer with shredded lettuce, Roastables Spicy Buffalo Cauliflower, shredded cheese, cucumbers, tomatoes, and shredded carrots.
  3. Roll up each tortilla tightly, folding in the sides as you go to create a wrap.
  4. Slice the wrap in half and serve with either Ranch or Blue Cheese dressing.
