Cacio Pepe Shrimp Caesar – Roastables Cauliflower Parmesan & Black Pepper

Ingredients

Shrimp:

  • 1 pound Shrimp
  • 3 Tablespoons Olive oil
  • 1 Tablespoon Lemon juice
  • 2 Garlic cloves, minced
  • 1 teaspoon Red pepper flakes
  • 1 teaspoon Oregano, dried
  • 1 teaspoon Smoked paprika
  • ½ teaspoon Kosher salt
  • ½ teaspoon Black pepper

Caesar Dressing:

  • ½ cup Mayonnaise
  • 2 Tablespoons Dijon mustard
  • 1 Tablespoon Lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Anchovy paste
  • 1 teaspoon Tabasco sauce
  • 1 garlic Clove, minced
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon Kosher salt
  • ¼ teaspoon Black pepper
  • 2 Tablespoons Olive oil

Directions

  1. Preheat oven to 450ºF.

Roastables:

  1. Follow the bag preparation instructions for the Cauliflower and place on a baking sheet. Roast for 20 minutes until golden and tender.

Shrimp:

  1. Whisk together marinade ingredients in a bowl until thoroughly combined.
  2. Place shrimp in marinade for 30 minutes.
  3. After broccoli has been cooking for 10-12 minutes, remove from oven and transfer shrimp to the Roastables sheet tray and bake for 6-8 minutes, until the shrimp are pink and opaque.

Caesar Dressing:

  1. In a bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, anchovy paste (if using), minced garlic, Parmesan cheese, salt, and pepper.
  2. Slowly drizzle in the olive oil while whisking, until the dressing is smooth and emulsified. Set aside.

Assembly:

  1. Drizzle dressing over the cauliflower and shrimp.
