4 large carrots, peeled and sliced into coins (about 1/4 inch pieces)
12 ounces processed cheese (such as Velveeta), cubed
1/2 cup unsalted butter, divided
1/2 cup crushed butter-flavored crackers (such as Ritz crackers)
Preheat oven to 350F. Steam vegetables in the microwave according to package directions. Place half in an ungreased 9x13 inch baking dish.
In a small saucepan, melt butter; cook and stir over low heat until melted. Pour half of the melted butter over vegetables. Top with half of the cubed cheese.
Combine the remaining butter with cracker crumbs. Repeat layer with remaining vegetables. Top with remaining cheese cubes. Add buttery cracker mixture to the top of the casserole. Bake, uncovered for 20-25 minutes or until golden brown and bubbly.
