Retail Merchandising: Artichokes
1 can (14 oz.) chicken broth with roasted garlic
3 slices (1 oz.) swiss cheese
1 cup fresh Italian or sourdough bread crumbs
2-3 tbsp. olive oil
Wash cardone; cut off base and tips and trim any leaves. Cut crosswise into 1-2 inch length. Soak cardone slices in lightly salted water over night. Drain well.
Turn cardone slices into 2-quart shallow baking dish or casserole and pour chicken broth over. Cover with foil and bake in 350°F oven until cardone is tender (about 20 minutes)
Top cardone with swiss cheese slices, then sprinkle with bread crumbs and drizzle with olive oil. Return to oven until cheese melts and crumbs are browned (about 10 to 15 minutes).
