  1. Preheat oven to 450ºF.

Roastables:

  1. Follow the bag preparation instructions for the Cauliflower and place on a baking sheet. Roast for 20 minutes until golden and tender.

Gratin:

  1. Melt butter in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes, until softened.
  2. Stir in minced garlic and cook for 30 seconds, until fragrant.
  3. Whisk in flour and cook for 1-2 minutes, stirring constantly.
  4. Pour in the heavy cream and milk. Stir to combine, and bring to a gentle simmer.
  5. Add the shredded Gruyère cheese, Parmesan, salt, pepper, and nutmeg. Stir until the cheese is melted and the sauce is smooth.
  6. Place the cooked Parmesan and Black Pepper Cauliflower in the prepared baking dish.
  7. Pour the cheese sauce over the cauliflower, ensuring the florets are well coated.
  8. Top with extra Parmesan cheese for a golden crust, if desired.
  9. Bake for 15-20 minutes, until bubbly and golden on top.
