Ingredients
- 1 bag of Ocean Mist Farms Roastables – Parmesan & Black Pepper Cauliflower Florets Roasting Kit
- 2 Tablespoons Butter
- 2 Tablespoons Flour
- 1 small Onion, finely diced
- 2 Garlic cloves, minced
- 1 cup Heavy cream
- 1 cup Whole milk
- 1 ½ cups Gruyère cheese, shredded
- ½ cup Parmesan cheese, grated
- ½ teaspoon Kosher salt
- ¼ teaspoon Black pepper
- ¼ teaspoon Nutmeg, ground
Directions
- Preheat oven to 450ºF.
Roastables:
- Follow the bag preparation instructions for the Cauliflower and place on a baking sheet. Roast for 20 minutes until golden and tender.
Gratin:
- Melt butter in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes, until softened.
- Stir in minced garlic and cook for 30 seconds, until fragrant.
- Whisk in flour and cook for 1-2 minutes, stirring constantly.
- Pour in the heavy cream and milk. Stir to combine, and bring to a gentle simmer.
- Add the shredded Gruyère cheese, Parmesan, salt, pepper, and nutmeg. Stir until the cheese is melted and the sauce is smooth.
- Place the cooked Parmesan and Black Pepper Cauliflower in the prepared baking dish.
- Pour the cheese sauce over the cauliflower, ensuring the florets are well coated.
- Top with extra Parmesan cheese for a golden crust, if desired.
- Bake for 15-20 minutes, until bubbly and golden on top.
