Ingredients
For the sauce:
- ½ cup mayonnaise
- 1/4 cup freshly grated Parmesan cheese
- 3 tablespoons lemon juice
- 1/4 teaspoon garlic powder
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon salt
For the cauliflower bites:
- 1 bag Ocean Mist Farms Season & Steam Cauliflower Florets
- 1 cup panko bread crumbs (or regular bread crumbs)
- 2 teaspoons olive oil
- ½ cup finely grated Parmesan, plus more for topping
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ½ cup flour
- 2 eggs, lightly beaten
- Fresh chopped parsley, for garnish
Directions
- Whisk together the sauce ingredients. Set aside until ready to use.
- Cook Season & Steam Cauliflower Florets in the microwave for 1 minute. Let stand for 1 minute before opening the bag. Remove from the bag and set aside to cool completely.
- Preheat the oven to 375 degrees F. Add the olive oil to a skillet over low heat. Add breadcrumbs and toast until they turn a light golden brown, stirring often (about 4-5 minutes). Remove from heat and transfer to a shallow bowl to cool.
- Once the breadcrumbs are cool, add Parmesan, Italian seasoning and salt. Stir to combine.
- Add the flour and beaten egg to two separate bowls. Dip each cauliflower floret in the flour to coat, shaking off excess. Dip in the egg and then roll in the seasoned breadcrumb mixture until fully coated.
- Place on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until the coating is golden brown and crunchy, flipping the florets halfway through.
- Top with additional Parmesan and fresh parsley. Serve with Parmesan Black Pepper sauce for dipping.
