Easy Baked Baby Artichokes

Pop these Baby Artichokes in the oven with a chicken or tri-tip and enjoy a stress-free meal!

12 Ocean Mist Farms Baby Artichokes, rinsed and trimmed
1/2 tsp. salt
2 Tbsp. olive oil
Juice from one Lemon
3 Garlic cloves, quartered for stuffing
2 sheets of heavy duty foil (big enough to make a foil pouch for 12 Baby Artichokes)

  1. Preheat oven to 425oF.
  2. Insert one Garlic sliver into the center of each Baby Artichoke. Place Baby Artichokes in the middle of double layered foil.
  3. Squeeze Artichokes with Lemon juice, drizzle with olive oil and season with garlic salt.
  4. Gather foil from all four corners (making a foil pouch by crimping foil at the top and not allowing steam to escape).
  5. Place Artichoke pouch on baking sheet and place in hot oven. Bake for 45 minutes.
  6. Remove pouch from oven and allow to sit for 10 minutes before opening. Use caution when opening since steam from pouch is very hot. Enjoy!
