2 fennel bulbs (cut fennel bulbs in half and place in microwavable pie dish with ¼ cup of water, cover and microwave on high for 7 minutes or until tender. When cool, slice into thin slices)
4 slices sourdough bread
4 slices Cheddar cheese
2 Fuji apples, cored and sliced (cook slices in microwave for 5 minutes until tender)
Spray 4 slices of sourdough bread with cooking spray.
On 2 slices of bread (on side that was not sprayed) divide evenly; Fennel slices, cheese and apple slices. Top sandwiches with 2 more slices of bread (Cooking spray side up).
Heat large grill pan over high heat and place sandwiches on grill. Place brick covered with foil or cooking weight on sandwiches and grill for 2 minutes on each side or until panini turns a golden brown and cheese melts. Remove sandwiches from pan and slice in half. Serves 4 half sandwiches.
