This will become a favorite fall time fennel sandwich with your entire family!

Ingredients
- 2 Ocean Mist Farms fennel bulbs
- 4 slices sourdough bread
- 4 slices Cheddar cheese
- 2 Fuji apples, cored and sliced (cook slices in microwave for 5 minutes until tender)
- Cooking spray
Directions
- Cut fennel bulbs in half and place in microwavable pie dish with ¼ cup of water, cover and microwave on high for 7 minutes or until tender. When cool, slice into thin slices.
- Spray 4 slices of sourdough bread with cooking spray.
- On 2 slices of bread (on side that was not sprayed) divide evenly; Fennel slices, cheese and apple slices. Top sandwiches with 2 more slices of bread (Cooking spray side up).
- Heat large grill pan over high heat and place sandwiches on grill. Place brick covered with foil or cooking weight on sandwiches and grill for 2 minutes on each side or until panini turns a golden brown and cheese melts. Remove sandwiches from pan and slice in half. Serves 4 half sandwiches.
