


Ingredients
- 1 bag of Ocean Mist Farms Roastables – Zesty Herb Broccoli Florets Roasting Kit
- 4 boneless, skinless Chicken breasts
Marinade:
- 2 Tablespoons Neutral oil
- 1 teaspoon Oregano, dried
- 1 teaspoon Thyme, dried
- 1 teaspoon Basil, dried
- ½ teaspoon Paprika
- ½ teaspoon Cumin
- 1 clove Garlic, minced
- Zest and juice of one Lemon
- 1 Tablespoon Kosher salt
Rice Pilaf:
- 2 cups Chicken or vegetable broth
- 1 cup Long-grain rice
- 2 Tablespoons Olive oil
- ½ small Onion, diced
- 1 Garlic clove, minced
- ½ teaspoon Kosher salt
- ¼ teaspoon Black pepper
Directions
- Preheat oven to 450ºF with the rack placed in the center position.
Roastables:
- Follow the bag preparation instructions for the Roastables Broccoli and place on a baking sheet.
- Roast for 20 minutes until golden and tender. Once cooked sprinkle with garlic parmesan panko topping.
Marinade & Chicken:
- Combine all ingredients for the marinade and mix together in a large bowl.
- Add in the boneless skinless chicken breasts. Cover and let marinade in the
refrigerator for 2-4 hours. - Place a sauté pan over high heat and sear both sides of each chicken breast
until browned. - Turn the heat to medium and cook for 7 minutes on each side
or until the chicken reaches an internal temperature of 165ºF.
Rice Pilaf:
- Rinse the rice under cold water until the water runs clear. Drain well.
- Heat olive oil in a medium saucepan over medium heat.
- Add diced onion and cook for 2-3 minutes, until softened.
- Stir in garlic, salt, black pepper, cooking for 30 seconds until fragrant.
- Mix in the rice and toast for 1 minute to coat with flavors.
- Pour in the broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes (do not lift the lid).
- Remove from heat and let sit, covered, for 5 minutes.
- Fluff the rice with a fork before serving.
Serve alongside Roastables Zesty Herb Broccoli.
