Ingredients

3 egg yolks

1 tsp. chopped garlic

1/4 cup lemon juice

1 cup olive oil (light)

Salt and pepper

Directions

  1. Use a food processor to whip the egg yolks, garlic and lemon juice.
  2. With the machine running, gradually add the olive oil.
  3. Season with salt and pepper.

Tip: If your aioli is getting too thick, add either more lemon juice or a little water.  If it is too thin, add a little more oil.  The consistency should be thick and creamy.
