Parmesan & Gruyère Roasted Cauliflower

1 large head cauliflower
3 tbsp. olive oil
1 cup fresh grated Parmesan
1 cup fresh grated Gruyère
Salt and fresh ground black pepper
Preheat oven to 350°F. Chop cauliflower into florets and discard stems. Place florets on sheet pan. Drizzle with olive oil and sprinkle generously with salt and pepper.
Toss and bake for 30 minutes, tossing halfway though for even roasting.
Sprinkle with cheese and bake for 2 minutes. Season to taste.
