Ingredients
- 1 bag of Ocean Mist Farms Roastables – Lemon Caesar Brussels Sprouts Kit
- 1 1/4 lb Salmon
- 4 tablespoons Olive oil
- 1 tablespoons Brown sugar
- 1/4 teaspoon Paprika
- Lemon zest from one lemon
- 1/2 teaspoon Kosher salt
- 1 lb Fingerling potatoes
Directions
Pre-heat your oven to 425ºF.
For the Brussels Sprouts:
- Follow bag preparation instructions for the Brussels sprouts and place them on a baking sheet.
For the Potatoes:
- Boil potatoes for 10 minutes. Strain and add to baking sheet topped with 2 tablespoons of olive oil and salt and pepper to taste.
For the Salmon:
- Pat salmon dry and then drizzle with olive oil. Mix sugar, 1/4 teaspoon salt, paprika and lemon zest together.
- Pat sugar mixture evenly onto salmon and add to sheet tray with Brussels sprouts and potatoes.
- Cook time: Roast sheet tray for 15-18 minutes, removing the fish first once it begins to flake when forked (approximately 10-12 minutes).
- Potatoes and brussels should be fork tender after 15-18 minutes. Add crispy garnish to Brussels sprouts. Enjoy!
