Sheet Tray Dinner | Lemon Caesar Brussels Sprouts with Citrus Salmon and Potatoes

Pre-heat your oven to 425ºF.

For the Brussels Sprouts:

  1. Follow bag preparation instructions for the Brussels sprouts and place them on a baking sheet.

For the Potatoes:

  1. Boil potatoes for 10 minutes. Strain and add to baking sheet topped with 2 tablespoons of olive oil and salt and pepper to taste.

For the Salmon:

  1. Pat salmon dry and then drizzle with olive oil. Mix sugar, 1/4 teaspoon salt, paprika and lemon zest together.
  2. Pat sugar mixture evenly onto salmon and add to sheet tray with Brussels sprouts and potatoes.
  3. Cook time: Roast sheet tray for 15-18 minutes, removing the fish first once it begins to flake when forked (approximately 10-12 minutes).
  4. Potatoes and brussels should be fork tender after 15-18 minutes. Add crispy garnish to Brussels sprouts. Enjoy!
