Ingredients

Sausage Meatballs:
  • 1 lb. mild Italian sausage, casing removed
  • ½ cup dried bread crumbs
  • ¼ cup grated Parmesan cheese
  • ¼ cup milk
  • 1 egg
  • ½ tsp. dried Italian seasoning
  • ½ tsp. black pepper
  • 1 Tbsp. Ocean Mist Farms parsley, chopped
Soup:
  • 4 cups hot chicken broth
  • 1 Tbsp. tomato paste
  • 1 tsp. minced garlic
  • 6 fresh basil leaves, chopped
  • 1 Ocean Mist Farms fennel bulb, cored and diced
  • ¼ tsp. red pepper flakes
  • ½ head Ocean Mist Farms cauliflower, diced
  • 10 oz. Ocean Mist Farms baby spinach leaves
  • Grated Parmesan cheese

Directions

  1. Combine all the meatball ingredients in medium size bowl. Form into marble-size meatballs.
  2. Combine all the other ingredients (except spinach and grated cheese) in a 4½ quart slow cooker. Add meatballs. Cover slow cooker and cook on low setting for 5 to 6 hours.
  3. 10 minutes before serving soup, stir in spinach leaves and ladle into bowls. Sprinkle with Parmesan cheese and serve immediately.
