This Italian Sausage and Spinach slow cooker soup is a crowd-pleaser!

Ingredients
Sausage Meatballs:
- 1 lb. mild Italian sausage, casing removed
- ½ cup dried bread crumbs
- ¼ cup grated Parmesan cheese
- ¼ cup milk
- 1 egg
- ½ tsp. dried Italian seasoning
- ½ tsp. black pepper
- 1 Tbsp. Ocean Mist Farms parsley, chopped
Soup:
- 4 cups hot chicken broth
- 1 Tbsp. tomato paste
- 1 tsp. minced garlic
- 6 fresh basil leaves, chopped
- 1 Ocean Mist Farms fennel bulb, cored and diced
- ¼ tsp. red pepper flakes
- ½ head Ocean Mist Farms cauliflower, diced
- 10 oz. Ocean Mist Farms baby spinach leaves
- Grated Parmesan cheese
Directions
- Combine all the meatball ingredients in medium size bowl. Form into marble-size meatballs.
- Combine all the other ingredients (except spinach and grated cheese) in a 4½ quart slow cooker. Add meatballs. Cover slow cooker and cook on low setting for 5 to 6 hours.
- 10 minutes before serving soup, stir in spinach leaves and ladle into bowls. Sprinkle with Parmesan cheese and serve immediately.
