Sweet Sesame Brussels Sprouts with Miso Glazed Salmon

Slightly sweet Asian flavor profile can pair with familiar proteins such as salmon, chicken and tofu.

Ingredients

Marinade

  • ¼ cup Miso paste
  • 3 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 tablespoon Brown sugar
  • 2 tablespoon Rice vinegar
  • 1 teaspoon Toasted sesame oil

Directions

  1. Preheat oven to 425ºF

For the Brussels Sprouts:

  1. Follow bag preparation instructions for the Brussels Sprouts and place on a baking sheet. Roast for 15-18 minutes until golden and tender. Once cooked sprinkle with sesame seeds.

For the Salmon:

  1. Whisk together marinade ingredients in a bowl until thoroughly combined.
  2. Place salmon fillets in marinade for 1-2 hours.
  3. Remove salmon filets from marinade and transfer them to a sheet tray and bake for 15 minutes, until the thickest part reaches an internal temperature of 125-130ºF.

For the Rice:

    1. In a medium saucepan with a lid, combine rinsed Jasmine rice with 3 cups of water.
    2. Place saucepan over medium-high heat and bring to a boil.
    3. Reduce the heat to low and simmer for 15-20 minutes, until all of the water has been absorbed.
