Ingredients
- 1 bag of Ocean Mist Farms Roastables – Sweet Sesame Brussels Sprouts Kit
- 4 Chicken thighs, bone-in, skin-on
- ¼ cup Olive oil
- 1 tablespoon Kosher Salt
- ¼ cup Cilantro, chopped
- 1 Green onion, chopped
- 1 Cucumber, thinly sliced
- 10 oz Soba noodles
Dressing
- 2 tablespoons Soy sauce
- 1 tablespoon Brown sugar
- 1 tablespoon Rice vinegar
- 1 clove Garlic, minced
- 1-inch piece Ginger, peeled & grated
- 1 teaspoon Sesame oil
Directions
- Preheat oven to 425ºF
For the Brussels Sprouts:
- Follow bag preparation instructions for the Brussels Sprouts and place on a baking sheet. Roast for 15-18 minutes until golden and tender. Once cooked sprinkle with sesame seeds.
For the Chicken:
- Pat chicken thighs dry with paper towels.
- Place chicken thighs, skin-side up on a prepared baking sheet.
- Season the thighs with olive oil and kosher salt. Cook for 35-40 minutes, or until the chicken reaches an internal temperature of 165ºF.
For the Soba Noodles:
- Cook soba noodles according to the package.
- Rinse soba under cold water to stop the noodles from cooking.
- In a large bowl, toss noodles, sliced cucumber, dressing, and chopped herbs together until well combined.
- Serve alongside Sweet Sesame Brussels Sprouts. Enjoy!
