Sweet Sesame Brussels Sprouts with Roasted Chicken and Cold Soba Noodles

Slightly sweet Asian flavor profile can pair with familiar proteins such as salmon, chicken and tofu.

Ingredients

Dressing

  • 2 tablespoons Soy sauce
  • 1 tablespoon Brown sugar
  • 1 tablespoon Rice vinegar
  • 1 clove Garlic, minced
  • 1-inch piece Ginger, peeled & grated
  • 1 teaspoon Sesame oil

Directions

  1. Preheat oven to 425ºF

For the Brussels Sprouts:

  1. Follow bag preparation instructions for the Brussels Sprouts and place on a baking sheet. Roast for 15-18 minutes until golden and tender. Once cooked sprinkle with sesame seeds.

For the Chicken:

  1. Pat chicken thighs dry with paper towels.
  2. Place chicken thighs, skin-side up on a prepared baking sheet.
  3. Season the thighs with olive oil and kosher salt. Cook for 35-40 minutes, or until the chicken reaches an internal temperature of 165ºF.

For the Soba Noodles:

  1. Cook soba noodles according to the package.
  2. Rinse soba under cold water to stop the noodles from cooking.
  3. In a large bowl, toss noodles, sliced cucumber, dressing, and chopped herbs together until well combined.
  4. Serve alongside Sweet Sesame Brussels Sprouts. Enjoy!
