Ingredients
- 1 tablespoon vegetable oil
- 1 tablespoon maple syrup
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon harissa
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 bag of Ocean Mist Farms Value-Added Vegetable Medley
Directions
- In a small bowl, whisk together the vegetable oil, maple syrup, lemon juice, garlic, harissa, salt and black pepper.
- Open the bag of Ocean Mist Farms vegetables and drizzle harissa mixture over the vegetables. Seal the bag tightly and shake to ensure the vegetables are evenly coated.
- Cook for 3 minutes on high in the microwave, steam valve side up. Let stand for 1 minute. Transfer vegetables to a serving bowl and top with red pepper flakes, if using.
