Ingredients

  • 1 tablespoon vegetable oil
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon harissa
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 bag of Ocean Mist Farms Value-Added Vegetable Medley

Directions

  1. In a small bowl, whisk together the vegetable oil, maple syrup, lemon juice, garlic, harissa, salt and black pepper.
  2. Open the bag of Ocean Mist Farms vegetables and drizzle harissa mixture over the vegetables. Seal the bag tightly and shake to ensure the vegetables are evenly coated.
  3. Cook for 3 minutes on high in the microwave, steam valve side up. Let stand for 1 minute. Transfer vegetables to a serving bowl and top with red pepper flakes, if using.
