Teriyaki Beef Bowl – Roastables Broccoli Sweet Teriyaki

Ingredients

Teriyaki Sauce:

  • ¼ cup Soy sauce
  • ¼ cup Water
  • ¼ cup Brown sugar
  • 1 Tablespoon Honey
  • 1 Tablespoon Rice vinegar
  • 1 clove Garlic, minced

Beef:

  • 1-inch piece Ginger, peeled &
    grated
  • 1 Tablespoon Cornstarch mixed
    with 1 Tablespoon water
  • 1 pound Flank steak, thinly sliced against the grain
  • 1 Tablespoon cornstarch
  • 1 Tablespoon vegetable oil
  • 2 cups Jasmine rice
  • 2 ½ cups Water
  • ½ teaspoon Salt

Directions

  1. Preheat oven to 450ºF with the rack placed in the center position.

Roastables:

  1.  Follow Roastables Sweet Teriyaki preparation instructions and place broccoli florets on baking sheet. Roast for 20-25 minutes until lightly browned and tender.
  2. Sprinkle with crispy garnish.

Teriyaki Sauce:

  1. In a small saucepan over medium heat, whisk together soy sauce, water, brown sugar, honey, rice vinegar, ginger, and garlic.
  2. Bring to a simmer and cook for 5 minutes.
  3. Stir in the cornstarch slurry and cook for another 1-2 minutes, until thickened.

Beef:

  1.  In a bowl, toss the sliced beef with cornstarch until evenly coated.
  2. Heat a large skillet or wok over medium-high heat. Add vegetable oil.
  3. Once hot, add beef in a single layer and cook for 2-3 minutes per side until browned.
  4. Add the teriyaki sauce to the pan and toss until the beef is evenly coated.
  5. Simmer for 1-2 minutes.

Rice:

  1. In a medium saucepan with a lid, combine rinsed Jasmine rice with 3 cups of water.
  2. Place saucepan over medium-high heat and bring to a boil.
  3. Reduce the heat to low and simmer for 15-20 minutes, until all of the water has been absorbed.

Serve alongside Roastables Sweet Teriyaki Broccoli. Enjoy!
