Ingredients

  • 1 teaspoon lemon juice
  • 2 teaspoons olive oil
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1 bag of Ocean Mist Farms Value-Added Vegetable Medley (Cauliflower, Broccoli & Carrots)
  • 4 dates, chopped
  • 1 tablespoon pine nuts
  • Handful of fresh mint leaves

Directions

  1. In a small bowl, whisk together lemon juice, olive oil, turmeric, salt and pepper.
  2. Open the bag of Ocean Mist Farms vegetables and drizzle turmeric mixture over the vegetables. Seal the bag and shake to ensure the vegetables are evenly coated.
  3. Open the bag and add the chopped dates. Reseal the bag and cook according to package directions.
  4. Transfer vegetables to a serving bowl and season to taste with additional salt and pepper. Top with pine nuts and mint leaves.
