Ingredients
- 1 teaspoon lemon juice
- 2 teaspoons olive oil
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon salt
- Pinch of black pepper
- 1 bag of Ocean Mist Farms Value-Added Vegetable Medley (Cauliflower, Broccoli & Carrots)
- 4 dates, chopped
- 1 tablespoon pine nuts
- Handful of fresh mint leaves
Directions
- In a small bowl, whisk together lemon juice, olive oil, turmeric, salt and pepper.
- Open the bag of Ocean Mist Farms vegetables and drizzle turmeric mixture over the vegetables. Seal the bag and shake to ensure the vegetables are evenly coated.
- Open the bag and add the chopped dates. Reseal the bag and cook according to package directions.
- Transfer vegetables to a serving bowl and season to taste with additional salt and pepper. Top with pine nuts and mint leaves.
