Back-to-School Breakfasts: Make-Ahead Mini Frittatas & Italian Breakfast Bread

Written by Ocean Mist Farms. | August 21, 2019

If there is one thing I know about going back to school, it's that mornings go by infinitely faster than they do in the summer. Timing out the morning routine so that breakfast didn't actually add to the stress was always a challenge. I learned the hard way that flipping pancakes on a school morning wasn't exactly the best use of our time.

Over the years, I've come to value make-ahead breakfasts that I could serve up as easy as a bowl of cereal but with the wholesome nutrition I could feel much better about. So I was inspired to share with you a few of our recipes that I know will help you navigate those hectic morning hours a little easier.

Sundried Tomato & Artichoke Mini Frittatas

These Sundried Tomato & Artichoke Mini Frittatas are not only delicious, but also packed with protein and fiber to keep you full until lunch (or beyond on a busy day!). The best part is that they are made in the Instant Pot, so they can be assembled and left alone to cook.

Italian Veggie Breakfast Bread

If you prefer sweet breakfasts over savory, this Italian Veggie Breakfast Bread satisfies your sweet tooth while boasting blood-sugar balancing vegetables to keep you from crashing later on. This dense, lightly spiced bread is good anytime of year, especially as the leaves begin to change outside and fall settles in. My mouth is watering just thinking about the way the sweet smell of this Italian Veggie Breakfast Bread fills the house while baking!

Getting up early again after a leisurely summer can be hard, but you might just find your family jumping up a little quicker when they know breakfast will be this good! Show me your favorite breakfast hacks on social media by tagging @oceanmistfarms.
