Beat the Heat with Cool and Creamy Classic Artichoke Ice Pops

Does stepping into your pool feel like getting into warm bath water? Is your air conditioning just not cutting it for you anymore? There comes a point during the summer when you just can’t escape the hot. Trust me, I’ve been there.

As the proverb says, “Necessity breeds invention”, invention of cool and refreshing Artichoke Ice Pops! This guilt-free, delicious and refreshing ice pop recipe offers an escape to daydream about cooler days ahead. Treat friends and family and help everyone beat the heat and say “Ahhh.”

INGREDIENTS

1 Season & Steam® artichoke (heart, stem and crown), prepared*
4 cups rice milk
1 can (14 oz.) sweetened condensed milk
¼ tsp. cinnamon
Green food coloring (optional)

DIRECTIONS

  1. In a blender, combine the cooked artichoke steam, heart and crown with 2 tablespoons of sweetened condensed milk. Blend on high until smooth.
  2. Add the remaining sweetened condensed milk, rice milk and cinnamon. Pulse until mixture is well combined. Add green food coloring and pulse until you reach the desired shade of green.
  3. Pour the liquid into the ice pop molds and insert wooden stick into each pop. Freeze pops for 8 hours or until solid. Pops can be kept frozen for 2 weeks (if they last that long)!
