Lemon Artichoke Ice Cream

The month of August is HOT in Eastern Washington where I spend the summer months. You might have thought of Washington as always being cool and wet, but some guests have commented on how the weather reminds them of Egypt.  Yes, you heard me right - Egypt!  Just last week we had temperatures of 107 degrees…in the evening!

Honestly, my biggest craving in this kind of heat is ice cream for breakfast, lunch and dinner.  This doesn't exactly align with my passion for promoting a healthy diet of fresh fruits and veggies, so I came up with an amazing recipe to satisfy both my passion and my craving for ice cream!  Using rich and creamy fresh artichoke hearts and refreshing lemons, my Lemon Artichoke Ice Cream is the very best of both worlds!
