Portable Picnic Food

Picnics, or simply eating outside, are a favorite warm weather activity.  With a bit more careful planning ahead, eating outside in the fresh air is the perfect physical distancing activity with friends and family. We each bring our own blanket and basket of food, and enjoy catching up in the fresh air and sunshine. And there's one thing I know for sure - just because your food has to be portable doesn't mean it can't be delicious and full of fresh vegetables. Here are three of my favorite dishes that pack well in a cooler and are just as flavorful as your favorite restaurant finds:

Artichoke & Almond Chicken Salad on Toasted Sourdough (Instant Pot)

Many people associate Instant Pot meals with wintertime, but I actually love using mine just as much in the summer. It doesn't heat the house as much as the stove or oven, and it cooks meat and artichokes much quicker. This almond chicken salad starts with tender chicken and chokes in the instant pot that transform into an elevated (but still nostalgic) picnic food. 

Balsamic Roasted Beets with Baby Spinach

If you've never tried the combination of roasted beets, goat cheese, and fresh toasted pecans, you're in for a treat. The perfect thing about this salad is that you can marinate the beets separately and then add to the spinach, goat cheese and pecans right before eating so that the spinach doesn't wilt. Bonus: spinach is high in magnesium and beets are known to fight inflammation, improve digestion, and more.

Cold Artichoke Dip

No picnic is complete without a classic dip. This cold artichoke dip can be served with pre-cooked artichoke petals, tortilla chips, pita chips, or a nice crudite platter for a refreshingly light snack. Customize by adding your favorite hot sauce, swapping Parmesan for another grated cheese, or lightening up with full fat yogurt in place of mayo.
