How to Cook Artichokes

Cooking artichokes doesn’t have to be complicated, and with their immune- and gut-boosting properties, they’re an essential addition to your diet. Follow the 5 steps below and you’re ready to bake, steam, microwave, Instant Pot, or grill with just a few more steps.

How to Prepare Artichokes

  1. Rinse and lightly scrub.
  2. Snip the top and cut off the stem. Snip the tip of the outer leaves with kitchen scissors. Peel outer part of stem with a vegetable peeler, cut a quarter slice off the end, and cook along with artichokes
  3. Rub cut artichoke with lemon to avoid browning
  4. Spread petals apart
  5. Add seasoning

Baked

Prep time: 10 minutes
Cook time: 1 hour

INGREDIENTS

  • 2 large Ocean Mist Farms artichokes, rinsed and trimmed
  • 1 lemon, halved
  • 4 cloves garlic, slivered
  • 2 Tbsp. olive oil
  • Sea salt to taste
  • Additional herbs of choice
  • 4 sheets of heavy duty foil wrap

DIRECTIONS

  1. Preheat oven to 425° F.
  2. Prepare artichokes by drizzling 1 Tbsp. olive oil and squeezing half a lemon over each one. Stuff slivered garlic between the leaves of each artichoke and season with salt and additional herbs of choice.
  3. Wrap each artichoke with 2 layers of heavy duty foil and seal.
  4. Bake large artichokes for 1 hour and 20 minutes or medium artichokes for 1 hour.
  5. Wrap and enjoy with your favorite dipping sauce.

Steamed

INGREDIENTS

  • 2 large Ocean Mist Farms artichokes, rinsed and trimmed

DIRECTIONS

  1. Fill a large pot with water up to the bottom of a steamer basket fitted to pot.
  2. Place artichokes stem-side up in steamer basket.
  3. Cover pot and bring water to a boil.
  4. Steam medium artichokes for 30-45 minutes and large artichokes for 1 hour.
  5. Remove when knife cuts easily through the stem, season or stuff with dip and enjoy.

Microwaved

Cook time: 20 minutes

INGREDIENTS

  • 2 large Ocean Mist Farms artichokes, rinsed and trimmed
  • 1 lemon, halved
  • Salt and pepper, to taste

DIRECTIONS

  1. Cut trimmed artichokes in half and rub with cut lemon.
  2. Place cut-side down in a shallow, microwave-safe dish.
  3. Season with salt and pepper.
  4. Add 1 inch of water to base of dish and cover.
  5. Microwave on high for 18-20 minutes, or until tender.

Instant pot

INGREDIENTS

  • 3 large Ocean Mist Farms artichokes, rinsed and trimmed
  • 1 cup water
  • 1 lemon, cut in wedges
  • Salt and pepper, to taste

DIRECTIONS

  1. Add water and lemons to the bottom of the Instant Pot.
  2. Place artichokes on top of the steaming rack in the Instant Pot stem side down.
  3. Season with salt and pepper.
  4. Seal and select “pressure cook” on high for 15 minutes.
  5. Release pressure naturally for 10 minutes or select instant release.

Grilled

INGREDIENTS

  • 2 large Ocean Mist Farms artichokes, rinsed and trimmed
  • Olive oil, for brushing
  • Salt and pepper, to taste

DIRECTIONS

  1. Steam artichokes until tender.
  2. Cut steamed artichokes in half and brush with olive oil.
  3. Season with salt and pepper.
  4. Heat grill over medium heat.
  5. Grill cut side down until lightly charred.
