Ingredients
1 package Ocean Mist Farms Season & Steam® artichokes
1 Ocean Mist Farms leek stalk, thinly sliced
2 tsp. olive oil
1 lb. ground turkey
1 tsp. salt
1/4 cup + 2 Tbsp. full-fat coconut milk
1 Tbsp. + 2 tsp. lemon juice
1 Tbsp. + 2 tsp. nutritional yeast
Directions
- Place the Ocean Mist Farms Season & Steam® bag into the microwave and cook for 7 minutes. Once the 7 minutes is up, let the artichokes steam inside the bag until ready to cut.
- Meanwhile, bring a large pan to medium-high heat and add the olive oil and sliced leek. Sauté for 2-3 minutes, until leek is soft and fragrant.
- Add the ground turkey and brown for 4-5 minutes, until cooked through.
- Lower the heat to medium and add the salt, coconut milk, lemon juice nutritional yeast, and chopped spinach. Mix well to incorporate.
- Chop the tops off the artichokes (be careful as they could still be hot) and slice off the stem. Cut the artichokes in half then gently scoop out the fuzzy section inside. Remove the hard, outer leaves until the soft center heart remains. Cut the heart into fourths and add to the pan.
- Serve with more nutritional yeast sprinkled over the top if desired.
