I don't know about you, but evenings on the back patio have been a breath of fresh air (literally) while I've been spending more time at home. And while "dining out" has only consisted of "take-out", it has certainly given me all the more reason to get festive with my dinner menu. I've perfected the pairing of my go-to summer recipes with cocktails & wine that can make even the most ordinary occasions feel like a celebration.
I love starting a meal with a fresh, crisp salad and a light cocktail such as a gin & tonic. Customize with flavors and fresh herbs such as basil, lime, cucumber, or elderflower which compliment the honey & lemon dressing. This Shaved Brussels Sprouts Salad has both Parmesan and Burratta cheese in it, so it practically doubles as the cheese starter course, too!
This Broccoli Pesto Chicken Pasta Salad is an equally delicious mix of light and decadent, much like a chilled, buttery glass of Chardonnay. This second course is a nice in-between the salad and the main, giving you the chance to savor and sip slowly while enjoying the long summer evening.
For the grand finale, enjoy these meaty, savory Sausage Stuffed Artichokes that are even better when paired with a glass of rich red wine. Choose your favorite (Pinot Noir anyone?) and end the night with this satisfying course- you won't even need dessert!
Cheers to an evening "out", even if just out on the back patio! Share your favorite pairings with us on social media.
