Balsamic Artichoke & Chicken Spaghetti Squash Bake

It was about time we made an incredibly easy dinner right?! Once you cook your spaghetti squash, artichoke hearts and chicken, all you have to do is mix them in a bowl with your favorite balsamic vinaigrette!

A huge bonus is that it's Heart Health Month! This month is a great time to add in things that are heart healthy so why not start with artichoke hearts?

Balsamic Artichoke & Chicken Spaghetti Squash Bake

 Ingredients:

  • 1 spaghetti squash, cooked & strands removed
  • 5 artichoke hearts, cooked and chopped
  • 4 cups chopped or shredded cooked chicken
  • 1/2 cup balsamic vinaigrette
  • salt and pepper

Directions:

  • Preheat oven to 400 degrees.
  • In a large bowl combine cooked spaghetti squash, artichoke hearts, chicken and balsamic vinaigrette. Season with salt and pepper.
  • Pour mixture into a casserole dish and bake for 10 minutes.

Ocean Mist Farms Pro Tip: While this recipe only calls for the artichoke hearts, you can throw in the leaves and stems into the mix to use the whole ‘choke – helping to reduce food waste one artichoke recipe at a time!
